Last night we had a picnic dinner in our backyard.  My daughter set the scene with blankets and table settings.  I got to work on the Roasted Chicken Salad Sandwiches – courtesy of the Food Network.  I found this easy Chicken Salad Sandwich recipe a few years ago and it quickly became our go-to recipe for picnics, Pops in the Park evenings, and even block parties.

This recipe is simple and goes great with my favorite, Sea salt & vinegar potato chips!

To make it even easier, instead of roasting my own chicken, I picked one up from our local Sprouts Market.  This way I didn’t have to turn on my oven when it was already 98 degrees here in Sacramento.

We create these tasty sandwiches and wrap them in parchment for easy transport and serve with fresh fruit, sea salt & vinegar potato chips….and for dessert, a homemade Banana Cream Pie. Delish!
